We here at eChocolateNYC of course don't condone "cheating" when it comes to working in the
kitchen but author Anne Byrn makes a persuasive case for cutting corners. Chocolate From The
Cake Mix Doctor is a followup to her extremely successful The Cake Mix Doctor.
Her basic premise is that to save time and money in concocting goodies the aspiring baker can
use commercial cake mixes. By cutting the mixes with cocoa powder to bring out the chocolate
flavor and adding sour cream to pump up the moisture you end up with a more palatable piece of
cake. A simple home made frosting on top, she skips store bought frostings, and you have some
more than passable baked goods in a fraction of the time.
We've experimented with a few of her recipes and can report back that they came out pretty well.
If you need to pound out 30 cupcakes or a quick cake, especially one that's going to be
consumed by kids, this is a very powerful book.
There are over 150 recipes in this book and we recommend taking a look especially if you are
pressed for time and are looking for ways to quicken the baking experience while still retaining
some artistry to your cake creations.
